2012 Watervale Riesling
The Clare Valley, 130km north of Adelaide, is synonymous with producing some of the most highly regarded Riesling in the world. Watervale is one of 5 unofficial subregions & is known to produce wines with distinct lifted floral intensity.
Made using a bare minimum of inputs, the resultant wine is textural yet feminine. The lifted floral bouquet comprises primarily jasmine with subtle hints of orange blossom & lavender. The palate has a driving line of citrus down the middle & is tighter then the bank manager. Classic Clare Valley Riesling, although drinking delicately now, due to the fine acid structure, this will live a long time & could be one of the all time greats.
Only available at selected independent retail & online.

Oysters - Riesling
Food & Wine matching can be a very accidental thing. In this case, it's a happy accident. Mum & Dad run Pacific Estate Oysters, an oyster farm at Stansbury on the South Australian Yorke Peninsula.
During the busy period it’s all hands on deck but after a day of oystering it’s handy having my crisp Watervale Riesling on hand as an easy match....
