2 years ago I made 20 dozen, last year 40, so in 2011 the trend continued up to 60 dozen.
Made for drinking now, or anytime you feel like it, my intentions for this wine were to play on the dry side but still maintain balance. The result is a wine you wouldn't describe as dry but it does have great balance between sweetness, acidity & flavour. Sweet berry fruit, confectionary & just a hint of spice make this a beautiful wine for sunny weekday afternoons.
Vinification:
Shiraz juice spent 48 hours on skins for colour absorption priot to pressing. A slow controlled fermentation followed to retain fresh aromatics before a short stint in large format 2 year old oak. A splash of Riesling for added texture & complexity on the palate and there you have it...
