Many of you may know that I have a penchant for physical activity. Having just completed my first half marathon I am currently in training for the Melbourne Marathon on Sunday 13th October to be followed by the Shepparton 70.3 Ironman Triathlon on Sunday 17th November. With that in mind, I need some healthy & tasty fuel for those long training sessions. Enter this recipe for "Black & Chewy Superbars".
1 cup dried cranberries.
1 cup coconut flakes / shredded coconut.
1 cup dates.
1/2 cup mixed peel.
1/2 cup pepitas.
1/2 cup sunflower seeds.
1/2 cup poppy seeds.
1/2 cup black sesame seeds.
1/2 cup honey.
2 tablespoons black chia seeds.
2 tablespoons melted coconut oil.
2 teaspoons cinnamon.
2 teaspoons vanilla extract.
1 teaspoon salt.
The How to...
You will need an oven tray that is approximately 300mm long x 200mm wide x 20mm deep. and one large mixing bowl.
Preheat your fan forced over to 170 degrees C.
In the mixing bowl mix all ingredients (start with the dry stuff, introducing the honey and oil later) thoroughly using a beater, spoon or your hands.
Grease the baking tray then cover with baking paper.
Pour the mixture into the baking tray and using the back side of a spoon pack the mixture down very firmly.
Bake for 20 minutes at 170 degrees C.
Remove from oven and allow generous cooling time. Once cool you can cut into bars & away you go.
