Tuesday Test Kitchen - Life Hack. Breakfast Mushrooms

Posted by David Bowley on

Breakfast. An institution.
Lining up for poached eggs on toast with smashed avocado has become an obsession in Melbourne. Australia's sporting capital? Only after lunch...
Holding up a mirror, it seems like odd behaviour, but I am ashamed to admit to being part of those long waiting lists. I've waited an hour for a Soft Shell Crab Burger & 73 minutes for White Anchovies on Toast with Serrano Ham & Manchego Cheese.
What have I never waited for? Mushrooms. 'Meat for vegetarians' circa 2002.
Why would you wait for Mushrooms when this 'Life Hack' makes brilliance this simple?

Ingredients: [serves 4]
400 grams white mushrooms. sliced.
1 tsp crushed garlic. [3 cloves]
40g butter.
1 tbsp dried Rosemary.
1 tsp Salt & Pepper.
40ml balsamic vinegar

With your skillet pan over medium heat, melt the butter & saute the garlic to infuse the flavours. Add the sliced mushrooms to the pan & saute for 2 to 3 minutes. Quickly the mushrooms will begin to soften so at this point add the rosemary & balsamic vinegar & stir through.
Continue on medium heat for a further 3 to 4 minutes.
Season with Salt & Pepper to taste.

Easy. Fast & off the charts delicious.
Now pass me the Bacon to go with it.
