A place to try new things and challenge ideas. 

A pale green hue depicts the sunshine just before golden hour, and has been captured in this bottle.

An initial hit of exotic citrus follows, and that green apple crunchy acidity braces you for a tightly wound mineral palate.

Layered with notes of Meyer lemon, and a whisper of creaminess over white flowers and honeycomb.

FIZZAH pops, and that's what it's all about.

Traditional Sparkling winemaking is where FIZZAH starts.
The focus is an early pick, putting acidity at the core.

Hand harvest is next to minimise phenolic pickup and retain fruit purity.

Continuing our hunt for balance, we used a gentle press cycle, select yeast, and maintained a cool temperature throughout the 14-day fermentation.

Following this, the wine matured for a further eight months on lees in the tank, allowing a creamy texture to develop.

Finally, the wine underwent the Charmat method to achieve that fresh, vibrant character and, of course, the FIZZ-AHHH!
