This traditional method Adelaide Hills sparkling features the two varieties that are the backbone of our region.

Pinot Noir (75%), Chardonnay (25%)

Tasting notes

Our latest Sparkling release pops with an energy that's pure spring sunlight. Vibrant and nourishing.
Upon release, it's all about that vibrant, primary fruit. But don't let its youthful exuberance fool you – there's a serious core here.

The opening is like biting into a crunchy green apple, still glistening with dew.
The second move has unfurling delicate white flowers and a whisper of poached pear.

The complexity that's just starting to peek through, a little nod to that distinctive betel leaf whisper that tells you Pinot Noir is there is support.

And to finish, like a perfectly balanced lemon cheesecake, where the toasty, nutty crust grounds that zesty lemon rind, leaving you with a delightful balance that keeps you coming back for more.

What we did to it
  • Hand harvest is critical for sparkling wines to ensure only the cleanest and most precise grapes are picked.
  • Whole Bunch Pressed for gentle extraction of the juice.
  • Fruit sourced from Lenswood and Piccadilly, Adelaide Hills.
  • Made in the Traditional Method (aka Methode Champenoise)
  • Pinot Noir base wine fermented in tank.
  • Chardonnay base wine fermented in seasoned French oak
  • 30% Malolactic Fermentation
  • Aged for 33 months on lees before being disgorged in February 2025
